Why bother pumping it

Ordinary air is about 21% oxygen, and oxygen is what turns roasted coffee flat. Pumping the jar down takes that to roughly 2%, and the silicone ring holds it there — the maker rates the seal at up to 30 days unopened.

Glass bodies and silicone seals wash normally. Hand-wash any wooden lid and dry it straight away; a dishwasher dries the wood out and splits it.
